    Prepare the Vegetables

    Wash and dice the red potatoes, onion, mixed bell peppers, and jalapeños. Set aside.

Cooking

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red potatoes and cook for about 10 minutes, or until they are tender and slightly crispy, stirring occasionally.

    Add Vegetables and Ham

    Add the diced onion, mixed bell peppers, jalapeños, and chopped ham to the skillet with the potatoes. Season with salt and black pepper. Cook for an additional 5-7 minutes, stirring frequently until the vegetables are soft.

    Add Cheese

    Sprinkle the mixed cheese over the top of the potato and vegetable mixture. Cover the skillet and let it sit for 2-3 minutes, or until the cheese is melted.

    Cook the Eggs

    In a separate non-stick skillet, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over-easy, etc.).

Assembly

    Spoon the potato and vegetable mixture onto a plate. Top with the cooked eggs. Serve hot and enjoy!
