Prepare Pico de Gallo

1. Make the Pico de Gallo

In a medium bowl, combine diced tomatoes, diced onion, chopped cilantro, minced jalapeño, lime juice, and salt. Mix well and set aside.

Cook Eggs

2. Scramble the Eggs

In a non-stick skillet, heat olive oil over medium heat. In a bowl, whisk together the eggs, 0.5 tsp of salt, and black pepper. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are just set but still creamy.

3. Add Protein

Once the eggs are nearly cooked, add your choice of shredded chicken, shredded beef, or carnitas into the skillet. Gently fold into the eggs and cook for another minute until heated through.
