Preparation of Filling

Cook the Meat
In a skillet over medium heat, cook the pollo asado or carne asada until fully cooked, about 10-15 minutes. Shred or chop the meat into small pieces.

Prepare the Pico de Gallo
In a bowl, mix diced tomatoes, onions, cilantro, jalapeños, lime juice, and salt to create fresh pico de gallo. Set aside.
Assembling Taquitos

Fill the Tortillas
Take a tortilla and place a portion of the cooked meat and a spoonful of pico de gallo in the center. Roll the tortilla tightly to form a taquito. Repeat until all tortillas are filled.
Frying the Taquitos

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until hot.

Fry the Taquitos
Carefully place 2-3 taquitos in the hot oil and fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
