Marinate the Steak
In a medium bowl, combine olive oil, lime juice, garlic powder, cumin, chili powder, salt, and black pepper. Whisk until well combined. Add the flank steak to the bowl, ensuring it is well coated with the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.

Grill the Steak
Preheat the grill to medium-high heat. Remove the steak from the marinade and discard any remaining marinade. Grill the steak for about 4-5 minutes on each side for medium-rare, or longer according to your desired doneness. Once cooked, remove from the grill and let it rest for 5 minutes before slicing thinly against the grain.

Assemble the Tacos
Take a warm tortilla and place a portion of the sliced steak in the center. Top with diced onion, chopped cilantro, sliced jalapeños, and a dollop of sour cream. Serve with lime wedges on the side for squeezing over the top.
