    Prepare the Shrimp

    In a large bowl, combine the peeled and deveined shrimp with lime juice. Ensure the shrimp is fully submerged in the lime juice to 'cook' it. Cover and refrigerate for at least 30 minutes until the shrimp turns opaque.

    Chop the Vegetables

    While the shrimp is marinating, dice the cucumber and avocado into small, bite-sized pieces. Set aside.

    Prepare Pico de Gallo

    If not using store-bought pico de gallo, chop tomatoes, onions, and cilantro to prepare fresh pico de gallo. Mix in a bowl and set aside.

    Combine Ingredients

    Once the shrimp is opaque, remove it from the refrigerator. Drain some of the lime juice, leaving a little for flavor. Add the diced cucumber, avocado, and pico de gallo to the bowl with the shrimp.

    Season the mixture with salt and black pepper to taste. Gently fold the ingredients together until evenly combined.

Serving

    Spoon the shrimp ceviche into serving bowls. Garnish with extra cilantro or lime wedges if desired. Serve immediately and enjoy!
