Preparation of Ingredients

    Prepare the Pico de Gallo

    If not using pre-made Pico de Gallo, chop tomatoes, onion, cilantro, and jalapeño. Mix together in a bowl and set aside.

    Grate the Cheeses

    Using a box grater, grate the Monterey Jack and Cheddar cheeses and combine them in a mixing bowl.

Cooking

    Heat the Skillet

    In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium heat.

    Melt the Cheese

    Add the mixed cheeses to the skillet. Stir continuously until the cheese is completely melted and bubbly.

    Add Salsas

    Once the cheese has melted, add the Salsa Española and Salsa Tomatillo on top of the cheese mixture. Stir gently to combine.

    Top with Pico de Gallo

    Spoon the Pico de Gallo over the melted cheese and salsa mixture.

    Garnish and Serve

    Sprinkle chopped fresh cilantro and finely chopped jalapeño (to taste) on top. Serve immediately while hot and bubbly.
