Prepare the Cheese Filling
In a mixing bowl, combine the Monterey Jack cheese and cheddar cheese. Mix well to ensure an even blend of the cheeses.

Heat the Tortillas
In a skillet over medium heat, add 1 tablespoon of olive oil or butter. Allow it to melt and heat up.

Assemble the Quesadilla
Place one tortilla in the skillet. Sprinkle half of the cheese mixture evenly over the tortilla. If desired, add more fillings like cooked chicken or vegetables.

Cook the Quesadilla
Top with another tortilla. Cook for about 2-3 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.

Flip the Quesadilla
Carefully flip the quesadilla using a spatula. Cook for an additional 2-3 minutes on the other side, until golden brown and crisp.

Repeat
Remove the quesadilla from the skillet and slice it into wedges. Repeat the process with the remaining tortillas and cheese mixture.

Serve the quesadillas warm with salsa and sour cream on the side.
