For the Pollo Asado

    Marinate the Chicken

    In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, paprika, oregano, salt, and black pepper. Mix well to create a marinade.

    Prepare Chicken

    Place the chicken thighs in a large resealable bag or a bowl and pour the marinade over the chicken. Make sure all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 2 hours, preferably overnight.

    Cook the Chicken

    Preheat your grill to medium-high heat. Remove chicken from the marinade and discard the marinade. Grill chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from grill and let rest for 5 minutes before serving.

For the Carne Asada

    In a mixing bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Mix well to create a marinade.

    Place the flank steak in a large resealable bag or a bowl and pour the marinade over the steak. Make sure the steak is well coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably overnight.

    Preheat your grill to high heat. Remove steak from the marinade and discard the marinade. Grill steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Allow to rest for 5 minutes before slicing against the grain.

For the Pico de Gallo

    In a medium bowl, combine the diced tomatoes, finely chopped onion, chopped cilantro, and minced jalapeño.
