For the Pollo Asado

Marinate the Chicken
In a large bowl, combine olive oil, minced garlic, lime juice, cumin, paprika, salt, black pepper, and oregano. Add the chicken pieces and ensure they are well-coated. Cover and refrigerate for at least 2 hours, or overnight for better flavor.

Marinate the Steak
In a large bowl, mix olive oil, minced garlic, lime juice, cumin, chili powder, salt, and black pepper. Add the flank steak and rub the marinade all over the meat. Cover and refrigerate for at least 2 hours, or overnight for better flavor.

Prepare the Pico de Gallo
In a medium bowl, combine diced tomatoes, diced onion, minced jalapeño, chopped cilantro, lime juice, and salt. Toss gently to combine. Let it sit for at least 15 minutes before serving to allow the flavors to meld.
