Prepare the Filling
In a mixing bowl, combine the cheddar cheese, Monterey Jack cheese, and any optional fillings like cooked chicken, bell peppers, corn, and black beans. Mix well and season with salt and pepper to taste.

Heat the Pan
In a large skillet over medium heat, add the olive oil or butter. Allow it to heat until it’s shimmering but not smoking.

Assemble the Quesadilla
Place one tortilla in the skillet. Evenly spread the cheese and filling mixture over the tortilla, then top with the second tortilla.

Cook the Quesadilla
Cook the quesadilla for about 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula and cook for another 3-4 minutes on the other side.

Slice and Serve
Once cooked, remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with salsa, sour cream, or guacamole if desired.
