    Cook the Beef

    In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it up with a spatula, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped onion, minced garlic, and bell pepper. Cook until the vegetables are softened, about 3-4 minutes.

    Season the Mixture

    Add the taco seasoning and refried beans. Mix well and cook for an additional 2-3 minutes. Remove from heat and set aside.

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    Prepare the Tortillas

    In a separate skillet, lightly warm the corn tortillas for 30 seconds on each side to make them pliable.

    Fill the Tortillas

    Place a generous spoonful of the beef and bean mixture in the center of each tortilla. Roll them up and place seam-side down in a greased baking dish.

    Add Sauce and Cheese

    Once all the enchiladas are in the baking dish, pour the mild enchilada sauce evenly over them. Sprinkle the shredded cheddar cheese on top.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
