Bean & Cheese Nachos

    Prepare the Nachos

    Preheat the oven to 350°F (175°C). Spread the tortilla chips evenly on a baking sheet.

    Layer the Ingredients

    Spread the refried beans over the chips, then sprinkle with shredded cheese and jalapeños.

    Bake

    Bake in the preheated oven for about 10 minutes, or until the cheese is melted.

    Serve

    Remove from oven, and serve warm with sour cream and guacamole on the side.

Cheese Quesadilla

    Heat the Pan

    In a skillet, melt 1 tablespoon of butter over medium heat.

    Assemble the Quesadilla

    Place one tortilla in the skillet, sprinkle half of the cheese evenly over it, and top with another tortilla.

    Cook the Quesadilla

    Cook for about 3-4 minutes or until the bottom is golden brown, then flip and cook the other side until golden and the cheese is melted.

    Repeat

    Remove from skillet and repeat with remaining tortillas and cheese. Cut into wedges to serve.

Taquitos

    Prepare the Filling

    In a bowl, mix shredded chicken or beef with salsa.

    Roll the Taquitos

    Warm the corn tortillas in a microwave for about 20 seconds to make them pliable. Place a small amount of filling on one end of each tortilla and roll tightly.

    Fry the Taquitos

    In a deep skillet, heat oil over medium-high heat. Fry the taquitos in batches until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove from oil and drain on paper towels. Serve hot with your choice of dipping sauce.
