For the Salsa Casera

Prepare the Ingredients
Dice the Roma tomatoes, red onion, jalapeño pepper, and garlic cloves. Chop the cilantro finely.

Let it Rest
Allow the salsa to sit for at least 15 minutes to let the flavors meld together.
For the Huevos Rancheros

Heat the Oil
In a non-stick skillet, heat the vegetable oil over medium heat.

Warm the Tortillas
In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until soft and pliable.

Assemble the Dish
Place each warm tortilla on a plate. Top each tortilla with a cooked egg and generously spoon the salsa casera over the eggs.

Add Avocado (Optional)
Slice the avocado and add it on the side or on top of the huevos rancheros for extra flavor.
