All flaming fajitas are cooked with grilled onions and mixed bell peppers. Served with sopa de fideo and rice & beans (refried, pinto, or black) or steamed vegetables.

Fajitas

    Prep the Ingredients

    Slice the chicken breast into thin strips. Slice the bell peppers and onion into thin strips.

    Marinate the Chicken

    In a bowl, combine the chicken strips with olive oil, cumin, chili powder, garlic powder, salt, and black pepper. Let it marinate for about 15 minutes.

    Cook the Fajitas

    Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 5 minutes, or until browned. Add the onion and bell peppers, and cook for an additional 5-7 minutes until the vegetables are tender.

    Warm the Tortillas

    While the fajitas are cooking, warm the tortillas in a separate pan for about 30 seconds on each side.

Sopa de Fideo

    Prepare the Base

    In a pot, heat a tablespoon of oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.

    Cook the Noodles

    Add the fideo noodles to the pot and cook for about 2 minutes, stirring frequently until they start to brown.

    Add Liquids

    Pour in the chicken broth and tomato sauce. Season with salt and pepper. Bring to a boil, then reduce heat and simmer for about 10 minutes until noodles are cooked.

    Finish and Garnish

    Stir in the chopped cilantro before serving.

Rice & Beans

    Prepare Rice and Beans

    In a small pot, warm the cooked rice and black beans over low heat. Season with salt to taste.

    Serve

    Once warmed through, remove from heat and garnish with cilantro, if desired.
