Method
Prepare the Fries

Cut the Potatoes
Wash and peel the potatoes. Cut them into thin strips to resemble fries.

Cook the Fajita Toppings

Prepare the Chicken/Steak
If using chicken, slice the breast into thin strips. If using steak, slice against the grain into thin strips.

Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add sliced onions and bell peppers. Sauté until they are soft and slightly caramelized, about 5-7 minutes.

Make the Queso Sauce

Combine the Ingredients
In a saucepan over medium heat, combine cream cheese, shredded cheddar cheese, and milk. Stir until melted and smooth.

Add Flavor
Stir in diced jalapeños and garlic powder. Mix well and cook for an additional 2-3 minutes until heated through.
Assemble the Fajita Fries

Layer the Fries
On a large serving platter, arrange a layer of the crispy fries.

Top the fries with the chicken or steak mixture and sautéed vegetables.

Drizzle with Queso Sauce
Generously drizzle the warm queso sauce over the top of the loaded fries. Serve immediately.
