Prepare the Chicken or Steak
Slice the boneless chicken breast or steak into thin strips. If using chicken, you may choose to marinate it in a mix of olive oil and fajita seasoning for about 30 minutes for added flavor.

Cook the Vegetables
Slice the onion and bell peppers into thin strips. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sliced onion and bell peppers, and sauté for about 5-7 minutes until they are tender and slightly charred. Remove them from the skillet and set aside.

Cook the Protein
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced chicken or steak and sprinkle the fajita seasoning over the top. Cook for about 6-8 minutes or until fully cooked, stirring occasionally.

Assemble the Burritos
Lay a large flour tortilla flat on a clean surface. Spoon a generous amount of the fajita filling onto the center of the tortilla. Top with a handful of Monterey Jack cheese.

Fold the Burrito
Fold the sides of the tortilla inward, then roll it up from the bottom to the top, encasing the filling tightly. Repeat with the remaining tortillas and filling.

Add Sauce and Cheese
Place the assembled burritos in a baking dish. Pour the red or green sauce over the top of the burritos and sprinkle with additional Monterey Jack cheese.

Bake
Preheat the oven to 350°F (175°C). Bake the burritos for about 15-20 minutes, or until the cheese is melted and bubbly.

Serve
Remove the burritos from the oven and let cool for a few minutes. Serve with optional sour cream and fresh cilantro on the side.
