Preparation

    Prepare the filling

    In a skillet over medium heat, add olive oil, chopped onion, and minced garlic. Sauté until the onion is translucent, about 5 minutes.

    Flavor the chicken

    Add the shredded chicken, cumin, salt, and black pepper to the skillet. Stir well to combine and cook for an additional 3-4 minutes until heated through.

    Prepare the tortillas

    In a separate pan, lightly warm the corn tortillas over low heat for about 30 seconds on each side to make them pliable.

Assembling the Enchiladas

    Fill the tortillas

    Take a warmed tortilla and place about 1/4 cup of the chicken filling in the center. Roll it tightly and place it seam-side down in a baking dish.

    Repeat the process

    Repeat with the remaining tortillas and filling until all are used.

    Add enchilada sauce

    Pour the enchilada sauce evenly over the rolled tortillas in the baking dish.

    Top with cheese

    Sprinkle the shredded cheese evenly over the top of the enchiladas.

Baking

    Bake the enchiladas

    Preheat your oven to 375°F (190°C). Place the baking dish in the oven and bake for about 20-25 minutes until the cheese is melted and bubbly.

Serving

    Serve hot

    Remove from the oven and let cool for a few minutes. Serve hot with your choice of toppings like sour cream, guacamole, or fresh cilantro.
