Marinate Proteins
In a large bowl, combine the olive oil, cumin, paprika, chili powder, salt, black pepper, and lime juice. Add the chicken, shrimp, and beef flank steak. Ensure all proteins are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.

While the proteins marinate, slice the bell peppers into thin strips and chop the onion into wedges. Mince the garlic cloves.

Cook Proteins
Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken first. Cook for about 5-7 minutes per side until fully cooked. Remove from the pan and let rest. Next, add the shrimp, cooking for about 2-3 minutes until pink and opaque. Finally, cook the beef for about 4-5 minutes per side for medium rare. Slice proteins into strips once cooked.

Assemble Fajitas
Warm the flour tortillas in a dry skillet or microwave until pliable. On each tortilla, layer the sliced proteins, sautéed vegetables, a dollop of sour cream, shredded cheese, fresh cilantro, and sliced jalapeños. Roll up the tortillas to enclose the filling.
