Prepare Pork
Begin by preparing the pork shoulder. Trim any excess fat and cut it into 1-inch cubes.

Season Pork
Season the pork cubes generously with salt and black pepper. Set aside.
Making Chile Sauce

Blend Chile Sauce
In a blender or food processor, combine the green chiles, diced onion, minced garlic, cilantro, chicken broth, lime juice, cumin, and a pinch of salt and pepper. Blend until smooth.

Adjust Sauce Seasoning
Taste the sauce and adjust seasoning as necessary with more salt, pepper, or lime juice.
Cooking

Combine in Slow Cooker
In a large slow cooker, add the seasoned pork cubes. Pour the blended chile sauce over the pork, ensuring it is well coated.

Slow Cook Pork
Cover the slow cooker and set it to low heat. Cook for 6-8 hours, or until the pork is tender and easily shredded.
