    Prepare the Chiles

    Remove the stems and seeds from the dried New Mexico and ancho chiles. Place them in a dry skillet over medium heat and toast for about 2-3 minutes, turning frequently until fragrant. Transfer the toasted chiles to a bowl and cover them with hot water. Let them soak for about 20 minutes until they are soft.

    Make the Chile Sauce

    Once the chiles are soft, drain them and place them in a blender. Add 1 cup of beef broth, garlic, cumin, and a pinch of salt. Blend until smooth. Set aside.

    Brown the Beef

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the diced beef and season with salt and pepper. Brown the beef on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion and bell pepper. Sauté until the onion is translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Combine Ingredients

    Return the browned beef to the pot. Pour in the blended chile sauce and the remaining beef broth. Stir well to combine all the ingredients.

    Simmer

    Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.

    Taste and adjust seasoning with additional salt and pepper if needed. Serve the Chile Colorado hot over rice, tortillas, or with your favorite sides.
