Marinate the Chicken
Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Cooking the Chicken

Preheat the Grill or Oven
Preheat your grill to medium-high heat or your oven to 375°F (190°C).

Cook the Chicken
Remove the chicken from the marinade and discard the remaining marinade. Grill the chicken for 6-7 minutes per side, or until cooked through and the internal temperature reaches 165°F (75°C). If baking, place the chicken on a baking sheet and bake for 25-30 minutes.

Sauté the Vegetables
In a skillet over medium heat, add a tablespoon of olive oil. Add the sliced onion and bell peppers. Sauté for about 5-7 minutes until they are soft and slightly caramelized. Add the mushrooms and cook for an additional 3-4 minutes until they are tender.

Add Cheese
Once the vegetables are cooked, remove the skillet from heat. Immediately sprinkle the shredded Monterey Jack cheese over the vegetables and cover for a minute to allow the cheese to melt.
Assemble the Dish

Serve the Chicken
Place the cooked chicken breasts on serving plates. Top each breast with the sautéed vegetable and melted cheese mixture. Serve hot.
