Method
Preparation
- 1
Marinate the Chicken
In a bowl, combine the olive oil, ground cumin, chili powder, garlic powder, salt, and black pepper. Add the chicken breasts, ensuring they are well coated with the marinade. Cover and let marinate in the refrigerator for at least 30 minutes.
- 2
Prepare the Vegetables
While the chicken is marinating, slice the bell peppers and onion into thin strips.
Cooking
- 3
Grill the Chicken
Preheat a grill or a grill pan over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side or until cooked through and no longer pink in the center. Once done, remove from the grill and let rest for a few minutes before slicing into strips.
- 4
Sauté the Vegetables
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onions and bell peppers. Sauté for 5-7 minutes until they are tender and slightly caramelized.
Assembly
- 5
Assemble the Fajitas
Warm the flour tortillas in a dry skillet or microwave. Place the sliced grilled chicken on the tortillas, top with the sautéed vegetables, sour cream, shredded cheese, cilantro, and a squeeze of lime juice if desired. Serve immediately.
