Preparation of Salsa Casera

    Blend Salsa Ingredients

    In a blender, combine tomatoes, onion, jalapeño, garlic, cilantro, lime juice, salt, and black pepper. Blend until smooth.

Cooking Chicharrones

    Simmer Pork

    In a large pot, add the pork belly and water. Bring to a boil over medium-high heat. Reduce heat to low, cover, and let simmer for 1 hour, or until the pork is tender.

    Add Pinto Beans

    After the pork has simmered, add the pinto beans to the pot. Stir in the prepared salsa casera and cook for an additional 30 minutes, allowing the flavors to meld.

    Crisp the Pork

    Once the mixture is cooked, remove the pork belly, and cut it into bite-sized pieces. In a skillet over medium heat, add the pork pieces and cook until crispy on all sides, about 5-7 minutes.

    Serve the crispy chicharrones topped with diced onion and fresh cilantro leaves. Enjoy with warm tortillas or as a topping for your favorite dishes.
