Prepare the Protein

    Cook the Chicken or Beef

    Season the pollo asado or carne asada with your choice of spices. Grill or pan-sear the meat over medium-high heat until cooked through, about 6-8 minutes per side. Let it rest before slicing.

Prepare the Fried Potatoes

    Fry the Potatoes

    Peel and cut the russet potatoes into thin strips. Heat vegetable oil in a deep pan over medium-high heat. Once hot, add the potato strips and fry until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Assemble the Burrito

    Layer the Ingredients

    On a large flour tortilla, layer sliced pollo asado or carne asada, fried potatoes, a generous amount of Monterey Jack cheese, pico de gallo, sour cream, and guacamole.

    Wrap the Burrito

    Fold in the sides of the tortilla and then roll it tightly from the bottom up to secure all the fillings inside.

Finish the Burrito

    Add the Sauce

    Place the wrapped burrito in a baking dish and cover it with red or green sauce. Sprinkle more Monterey Jack cheese on top.

    Bake

    Preheat your oven to 350°F (175°C) and bake the covered burrito for about 15 minutes, or until the cheese is melted and bubbly.
