Burrito Filling Preparation

Cook the Protein
In a large skillet, heat the olive oil over medium heat. Add the ground beef or chicken, breaking it up with a spatula. Cook until browned, about 5-7 minutes.

Add Vegetables
Add the chopped onion, diced bell peppers, and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the vegetables are softened.

Season the Filling
Stir in the taco seasoning, black beans, cooked rice, salt, and black pepper. Mix well and cook for another 2-3 minutes until heated through. Remove from heat.

Add Cheese
Fold in the shredded Monterey Jack cheese until melted and well incorporated into the filling.
Burrito Assembly

Prepare Tortillas
Warm the flour tortillas in a dry skillet for about 30 seconds on each side, or until pliable.

Fill the Tortillas
Spoon the filling mixture onto the center of each tortilla. Be careful not to overfill.

Roll the Burritos
Fold the sides of the tortilla inward and then roll it up tightly from the bottom to the top.

Add Sauce and Cheese
Place the rolled burritos in a baking dish. Pour the red or green sauce over the top and sprinkle with additional Monterey Jack cheese.

Bake
Preheat the oven to 375°F (190°C). Bake the burritos for 15-20 minutes or until the cheese is melted and bubbly.

Serve warm with optional sour cream and chopped cilantro on the side.
