Prep Work

    Chop Vegetables

    Dice the bell pepper and onion into small pieces.

    Whisk Eggs

    In a bowl, crack the eggs and whisk them until combined. Add salt, black pepper, cumin, and chili powder to the eggs and mix well.

Cooking

    Sauté Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell peppers and onions. Sauté for about 5-7 minutes, until they are tender and slightly caramelized.

    Scramble Eggs

    Push the sautéed vegetables to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side and pour in the whisked eggs. Allow them to cook for about 1-2 minutes, then gently stir to scramble until fully cooked and combined with the vegetables.

    Warm Tortillas

    While the eggs are cooking, wrap the flour tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes, or until warmed through.

Serving

    Assemble Fajitas

    Remove the tortillas from the oven. Spoon the scrambled egg and vegetable mixture onto each tortilla. Roll or fold the tortillas to enclose the filling.

    Serve

    Serve the breakfast fajitas warm with your choice of salsa or hot sauce on the side.
