Beef Preparation

Prepare the Chiles
Remove the stems and seeds from the guajillo and ancho chiles. Soak them in hot water for about 20 minutes until softened.

Blend the Marinade
In a blender, combine the softened chiles, garlic cloves, cumin, oregano, salt, and black pepper. Add a little beef broth to help blend into a smooth paste.

Cook the Beef
In a large pot, sear the chuck roast on all sides until browned. Add the blended mixture, remaining beef broth, and bay leaves. Bring to a simmer, cover, and cook for about 3 hours until the beef is tender and shreds easily.

Serve
Ladle the hot consommé into small bowls and serve alongside the taquitos with lime wedges.
