    Make the Ice Cream Base

    In a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.

    Blend Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and thick. Gradually add a small amount of the warm cream mixture to the yolks to temper them, then whisk in the rest of the cream mixture.

    Cook the Mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon (about 10 minutes). Do not allow it to boil.

    Chill the Base

    Remove from heat, stir in the vanilla extract, and pour the mixture into a bowl. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
