Prepare the Cream

In a saucepan, heat the heavy cream over medium heat. Split the vanilla bean lengthwise, scrape the seeds into the cream, and add the bean pod as well. Heat until just simmering, then remove from heat and let steep for 15 minutes.

Whisk Egg Yolks

In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and thickened.

Combine Mixtures

Remove the vanilla bean pod from the cream. Gradually whisk the warm cream into the egg yolk mixture until well combined.

Bake the Custard

Preheat the oven to 325°F (160°C). Pour the custard mixture into ramekins and place them in a baking dish. Fill the baking dish with hot water halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the custards are set around the edges but still slightly jiggly in the center.

Cool and Chill

Remove the ramekins from the water and let them cool to room temperature. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.

Caramelize the Sugar

Sprinkle a thin layer of brown sugar over the chilled custards. Use a kitchen torch to caramelize the sugar until it forms a crispy, golden crust. Alternatively, place under a broiler for a few minutes, watching closely to avoid burning.

Let the creme brulees sit for a minute to cool slightly before serving. Enjoy the contrast of the crunchy caramelized sugar and the creamy custard!
