    Prepare the Ingredients

    Thinly slice the ribeye steak, onion, green bell pepper, and mushrooms.

    Cook the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onion, green bell pepper, and mushrooms. Sauté for about 5-7 minutes until softened. Season with salt and black pepper. Remove from the skillet and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced ribeye steak, season with salt and black pepper, and cook for about 3-4 minutes until browned.

    Combine and Melt the Cheese

    Add the sautéed vegetables back to the skillet with the steak. Place the provolone cheese slices on top and cover the skillet. Let it cook for another 2-3 minutes until the cheese melts.

    Assemble the Sandwich

    Split the hoagie rolls and fill each with the cheesesteak mixture. Serve immediately with French fries on the side.
