Preparing the Seafood

    Cleaning the Prawns and Shellfish

    Rinse the red tiger prawns and shellfish under cold water. Remove the shells from the prawns, leaving the tails intact. Clean the shellfish thoroughly, removing any sand or debris.

    Preparing the Red Mullet

    Pat the red mullet fillets dry with a paper towel. Season with salt and black pepper.

Making the Herb Butter

    Mixing the Ingredients

    In a medium bowl, combine the softened unsalted butter, chopped fresh mint leaves, minced garlic cloves, lemon juice, salt, and black pepper. Mix until well combined.

    Grilling the Seafood

    Preheat a grill or grill pan over medium-high heat. Brush the red tiger prawns and red mullet fillets with a little herb butter. Grill the prawns for about 2-3 minutes on each side until cooked through and slightly charred. Grill the red mullet fillets for about 3-4 minutes on each side until the flesh is opaque.

    Cooking the Shellfish

    In a separate pot, add the cleaned shellfish with a splash of water and a dollop of herb butter. Cover and steam for about 5-7 minutes until the shells open up. Discard any that do not open.

Preparing the Sourdough

    Grilling the Bread

    While the seafood is cooking, grill the sourdough slices on the grill until they are toasted and have grill marks, about 2-3 minutes per side.

Serving

    Plating the Dish

    On a serving platter, arrange the grilled red tiger prawns, red mullet, and shellfish. Serve with the grilled sourdough slices on the side. Top with additional herb butter if desired.
