Marinating the Mutton
1. Prepare the Marinade
In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Mix well.
2. Marinate the Mutton
Add the mutton pieces to the marinade and mix until well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
Preparing the Rice
3. Soak the Rice
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes and then drain.
Frying Onions and Assembling
5. Fry the Onions
In a large pan, heat ghee or oil over medium heat. Slice the onions thinly and fry until golden brown and crispy. Remove and drain on paper towels.
6. Layer the Biriyani
In the same pan, layer half of the cooked rice, followed by the marinated mutton, and then the remaining rice on top. Scatter fried onions, chopped cilantro, and mint leaves over the top.
