Preparation

Marinating the Mutton

1. Prepare the Marinade

In a large bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and lemon juice. Mix well.

2. Marinate the Mutton

Add the mutton pieces to the marinade and mix until well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preparing the Rice

3. Soak the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes and then drain.

4. Cook the Rice

In a large pot, bring 6 cups of water to a boil. Add bay leaves, cloves, cardamom pods, and cinnamon stick. Once boiling, add the soaked and drained rice. Cook until the rice is about 70% done, then drain and set aside.

Frying Onions and Assembling

5. Fry the Onions

In a large pan, heat ghee or oil over medium heat. Slice the onions thinly and fry until golden brown and crispy. Remove and drain on paper towels.

6. Layer the Biriyani

In the same pan, layer half of the cooked rice, followed by the marinated mutton, and then the remaining rice on top. Scatter fried onions, chopped cilantro, and mint leaves over the top.

Cooking the Biriyani

7. Final Cook

Cover the pot with a tight-fitting lid and cook on low heat for about 45 minutes until the mutton is tender and the flavors meld together.

8. Serve

Fluff the biriyani gently with a fork, serve hot with raita or salad on the side.
