Method
Preparing the Rice

Rinse and Soak Rice
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain.

Cook Rice
In a large pot, bring 4 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook until the rice is 70% done, then drain and set aside.
Marinating the Fish

Prepare Marinade
In a bowl, mix yogurt, turmeric powder, red chili powder, ginger-garlic paste, lemon juice, and salt.

Marinate Fish
Add the fish fillets to the marinade and coat well. Let it marinate for at least 30 minutes.
Cooking the Biriyani

Prepare the Base
In a large, heavy-bottomed pot, heat the cooking oil or ghee over medium heat. Add the whole spices and sauté for a minute until aromatic.

Sauté Onions
Add the sliced onions and cook until golden brown. Stir in the chopped tomatoes and green chilies, cooking until the tomatoes soften.

Cook Fish
Gently add the marinated fish to the pot, cooking for about 5-7 minutes until the fish is cooked through.

Layer the Biriyani
Spread half of the cooked rice over the fish mixture, followed by half of the chopped cilantro and mint. Repeat with the remaining rice and herbs.

Cover the pot with a tight-fitting lid and cook on low heat for about 15-20 minutes, allowing the flavors to meld together.
