Preparing the Chips

Cut the Potatoes

Peel the potatoes and cut them into thick fries, about 1/2 inch wide.

Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

Preheat the Oil

In a large pot or deep fryer, heat the oil to 350°F (175°C).

Fry the Chips

Drain the soaked potatoes and pat them dry with a paper towel. Fry them in batches until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels, then season with salt.

In a mixing bowl, combine the flour, baking powder, salt, and pepper. Gradually whisk in the beer until smooth and well combined.

In another pot, heat a clean batch of oil to 350°F (175°C).

Dip each fish fillet into the batter, allowing excess to drip off.
