Fish Preparation

    Prepare the Sea Bass

    Clean and scale the Mediterranean sea bass. Make several diagonal cuts on each side of the fish to allow for even cooking.

    Season the Fish

    Rub the fish with olive oil, salt, and black pepper, ensuring the seasoning gets into the cuts. Squeeze the juice of half the lemon inside the cavity and on the fish surface. Reserve the other half for serving.

Toasted Fennel Oil

    Toast the Fennel Seeds

    In a small skillet over medium heat, toast the fennel seeds until fragrant, about 2-3 minutes. Be careful not to burn them.

    Prepare the Fennel Oil

    Add the toasted fennel seeds to a saucepan with 1 cup of olive oil. Heat over low heat for 10-15 minutes, allowing the flavors to infuse. Strain the oil into a bowl and set aside.

Crispy Garlic

    Prepare the Garlic

    Thinly slice the garlic cloves.

    Fry the Garlic

    In a small saucepan, heat 1 cup of olive oil over medium heat. Add the sliced garlic and fry until golden brown and crispy, about 3-4 minutes. Remove the garlic with a slotted spoon and drain on paper towels.

Grilling

    Grill the Fish

    Preheat the grill to medium-high heat. Place the seasoned sea bass directly on the grill grates. Grill for about 6-8 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Remove the fish from the grill and drizzle with toasted fennel oil. Top with crispy garlic and serve with lemon wedges.
