Pasta Preparation

    Cook the Spaghetti

    Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the spaghetti.

    Cook the Pancetta

    In a large skillet over medium heat, add the pancetta. Cook until crispy and golden brown, about 4-5 minutes. Remove from heat and set aside.

    Prepare the Egg Mixture

    In a mixing bowl, whisk together the eggs, grated parmesan cheese, and black pepper until well combined. Set aside.

    Combine Ingredients

    Add the hot drained spaghetti to the skillet with the pancetta. Quickly pour the egg and cheese mixture over the pasta, tossing continuously to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

    Garnish and Serve

    Serve immediately, garnished with chopped fresh parsley and additional parmesan cheese if desired. Season with salt to taste.
