Fava Base Preparation

    Rinse and Cook Yellow Split Peas

    Place the yellow split peas in a fine-mesh strainer and rinse under cold running water. In a large pot, combine the rinsed peas, water, and salt. Bring to a boil over medium-high heat.

    Simmer the Peas

    Once boiling, reduce the heat to low and cover the pot. Allow the peas to simmer for about 30-40 minutes, or until they are soft and mushy. Stir occasionally and add more water if necessary to prevent sticking.

    Blend the Fava

    Once the peas are cooked, remove the pot from the heat. Use an immersion blender or transfer the mixture to a food processor and blend until smooth. Drizzle in the olive oil while blending to create a creamy texture.

    Season to Taste

    Taste the fava and adjust the seasoning with more salt if needed. Set aside and keep warm.

Salsa Verde Preparation

    Combine Salsa Verde Ingredients

    In a mixing bowl, combine the finely chopped red onion, chopped capers, fresh parsley, lemon juice, olive oil, salt, and black pepper.

    Mix Well

    Stir the ingredients together until they are well combined. Taste and adjust seasoning if needed.

Assembly

    Serve the Fava

    Spoon the warm fava onto serving plates or bowls.

    Top with Salsa Verde

    Generously spoon the salsa verde over the fava, allowing it to soak in slightly. Drizzle with additional olive oil if desired.
