Panna Cotta Preparation

    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin powder over the cold water. Let it sit for about 5 minutes to bloom.

    Heat the Cream Mixture

    In a saucepan, combine the heavy cream, whole milk, sugar, and split vanilla bean (scrape the seeds into the mixture as well). Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

    Add Gelatin

    Once the cream mixture is heated, remove it from the heat. Add the bloomed gelatin to the warm mixture and stir until completely dissolved.

    Strain and Cool

    Strain the mixture through a fine mesh sieve into a bowl or measuring cup to remove the vanilla bean pod and any lumps. Allow the mixture to cool slightly before pouring it into individual serving glasses or molds.

    Chill

    Cover the glasses or molds with plastic wrap and refrigerate for at least 4 hours, or until set.

Berry Sauce Preparation (optional)

    Prepare the Berries

    In a medium saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook for about 5-7 minutes, stirring gently until the berries release their juices and the mixture thickens slightly.

    Cool the Sauce

    Remove the saucepan from the heat and let the sauce cool. It can be served warm or chilled over the panna cotta.
