    Prepare the seafood

    In a bowl, combine the shrimp, mussels, calamari, and fish fillets. Set aside.

    Prepare the broth

    In a saucepan, heat the fish stock or seafood broth over medium heat. Add saffron threads to infuse the broth with color and flavor.

Cooking

    Sauté vegetables

    In a large paella pan or skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add garlic and peppers

    Stir in the minced garlic and diced bell pepper. Cook for another 3-4 minutes until softened.

    Incorporate tomatoes and spices

    Add the diced tomatoes, paprika, salt, and black pepper. Cook for about 5 minutes until the tomatoes break down.

    Add rice

    Stir in the Bomba or Arborio rice, ensuring it is well coated with the mixture.

    Add broth

    Pour in the prepared fish stock with saffron. Stir gently and bring to a simmer.

    Add seafood

    Arrange the prepared seafood on top of the rice. Do not stir after this point.

    Cook the paella

    Let the paella simmer for about 15-20 minutes on low heat, or until the rice is cooked and the seafood is fully cooked. If the rice is not fully cooked but the liquid is gone, add a little more broth or water.

    Add peas

    In the last 5 minutes of cooking, sprinkle the frozen peas over the top.

    Once cooked, remove the pan from heat and let it rest for 5 minutes. Garnish with fresh parsley and serve with lemon wedges.
