Method

Marinating the Mutton

    Prepare the marinade

    In a large bowl, combine the mutton pieces, yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, and salt. Mix well to coat the mutton evenly.

    Marinate the mutton

    Cover the bowl and marinate the mixture in the refrigerator for at least 2 hours, or overnight for best results.

Cooking the Rice

    Rinse the rice

    Rinse the basmati rice under cold water until the water runs clear to remove excess starch.

    Cook the rice

    In a large pot, bring 1.5 liters of water to a boil. Add the rinsed rice, bay leaves, cinnamon stick, cloves, cardamom pods, and cook until the rice is about 70% cooked (about 5-7 minutes). Drain the rice and set aside.

Cooking the Mutton

    Sauté the onions

    In a large heavy-bottomed pot, heat oil over medium heat. Add the thinly sliced onions and sauté until golden brown.

    Cook the marinated mutton

    Add the marinated mutton to the pot and cook on medium-high heat until the mutton is browned and cooked through (about 15-20 minutes). Stir occasionally.

Layering and Final Cooking

    Layer the biryani

    Once the mutton is cooked, reduce the heat to low. Layer the partially cooked rice over the mutton. Add chopped coriander and mint leaves on top.

    Cover the pot with a tight-fitting lid and cook on low heat for about 25-30 minutes to allow the flavors to meld and the rice to finish cooking.

    Gently fluff the biryani with a fork, garnish with fried onions (if using), and serve hot with raita or salad.
