Preparation of Fish

    Marinate the Fish

    In a bowl, combine the fish fillets with ginger-garlic paste, turmeric powder, red chili powder, and salt. Mix well to coat the fish evenly. Let it marinate for at least 30 minutes.

Cooking Rice

    Rinse and Soak Rice

    Thoroughly rinse the basmati rice under cold water until the water runs clear. Then, soak the rice in water for 30 minutes.

    Cook the Rice

    In a large pot, bring 4 cups of water to a boil. Add the soaked rice and a pinch of salt. Cook the rice until it is about 70% done (it should still have a bite). Drain the rice and set aside.

Making Biryani

    Fry Onions

    In the same pot, heat the cooking oil or ghee over medium heat. Add the sliced onions and fry until they are golden brown.

    Add Tomatoes and Spices

    Add the chopped tomatoes and cook until they soften. Stir in the marinated fish and cook for about 5-7 minutes until the fish is cooked through.

    Layer the Biryani

    Once the fish is cooked, layer half of the cooked rice over the fish mixture. Sprinkle half of the chopped coriander and mint leaves. Then, add the remaining rice and top with the remaining herbs. Sprinkle biryani masala and place whole spices on top.

    Dum Cooking

    Cover the pot with a tight-fitting lid and reduce the heat to low. Cook for about 20 minutes, allowing the flavors to meld together.

Serving

    Serve Hot

    Once the biryani is ready, gently fluff it with a fork. Serve hot with raita or salad on the side.
