Mousse Preparation

Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whip Egg Yolks
In a separate bowl, whisk the egg yolks and granulated sugar until pale and fluffy. Stir in the melted chocolate mixture and add vanilla extract and a pinch of salt. Mix until well combined.

Beat Egg Whites
In a clean mixing bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours or until set.

Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, beat the cream until soft peaks form.

Serve
Once the mousse has set, remove it from the refrigerator. Top each serving with a dollop of whipped cream before serving.
