Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust them with flour to prevent sticking.

  2. 2

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the bittersweet chocolate and unsalted butter. Heat in the microwave in 30-second intervals, stirring between each until completely melted and smooth.

Mixing Ingredients

  1. 3

    Combine Eggs and Sugar

In a separate bowl, whisk together the eggs, egg yolks, and granulated sugar until well combined and slightly frothy.

  2. 4

    Add Chocolate Mixture

Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring continuously to avoid cooking the eggs.

  3. 5

    Incorporate Dry Ingredients

Sift in the flour and add the vanilla extract and a pinch of salt. Fold the mixture gently until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Serving

  1. 8

    Cool and Serve

Remove from the oven and let sit for 1 minute. Run a knife around the edges to loosen, then invert onto dessert plates. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream.
