    Preheat your oven to 200°C (390°F) to ensure it’s hot enough for the fondants.

    Prepare ramekins

    Grease four ramekins with 1 tablespoon of unsalted butter, then dust with cocoa powder to prevent sticking.

    Melt chocolate and butter

    In a heatproof bowl, combine 200g of dark chocolate and 100g of unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

    Mix sugar and eggs

    In a separate bowl, whisk together 150g of granulated sugar and 3 large eggs until the mixture is pale and fluffy.

    Combine mixtures

    Pour the melted chocolate and butter mixture into the egg and sugar mixture. Add 1 teaspoon of vanilla extract and a pinch of salt, then stir until fully combined.
