Preheat your oven to 200°C (390°F) to ensure it’s hot enough for the fondants.

Prepare ramekins
Grease four ramekins with 1 tablespoon of unsalted butter, then dust with cocoa powder to prevent sticking.

Melt chocolate and butter
In a heatproof bowl, combine 200g of dark chocolate and 100g of unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.

Mix sugar and eggs
In a separate bowl, whisk together 150g of granulated sugar and 3 large eggs until the mixture is pale and fluffy.

Add flour
Gently fold in 50g of all-purpose flour until just incorporated, being careful not to overmix.

Fill ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake the fondants
Place the ramekins on a baking tray and bake in the preheated oven for about 10-12 minutes. The edges should be set while the center remains soft.
