Method
Pasta Preparation
- 1
Cook Fettuccine
In a large pot, bring water to a boil. Add salt and fettuccine pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
- 2
Drain and Set Aside
Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water for later use.
Chicken Preparation
- 3
Prepare Chicken
Season both sides of the chicken breasts with olive oil, garlic powder, salt, and black pepper.
- 4
Grill Chicken
Preheat a grill or grill pan over medium-high heat. Cook the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Remove from heat and allow to rest for 5 minutes before slicing.
Alfredo Sauce Preparation
- 5
Melt Butter
In a large skillet over medium heat, melt 1 tablespoon of butter.
- 6
Add Garlic
Mince the garlic cloves and add them to the skillet. Sauté for about 1-2 minutes until fragrant.
- 7
Add Cream and Cheese
Pour in the heavy cream, stirring continuously. Gradually add the grated Parmesan cheese, stirring until the cheese is melted and the sauce is creamy.
- 8
Season Sauce
Season the sauce with salt and black pepper. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
Combine and Serve
- 9
Combine Pasta and Sauce
Add the drained fettuccine pasta to the skillet with the Alfredo sauce. Toss to coat the pasta evenly.
- 10
Serve
Slice the grilled chicken and place it on top of the pasta. Garnish with chopped parsley if desired. Serve immediately.
