Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Make the Coating Mixture

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well.

    Dredge the Calamari

    Pour the buttermilk into another bowl. Dip each calamari ring into the buttermilk, allowing excess to drip off, then dredge in the flour mixture until fully coated. Set aside on a baking sheet.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

    Fry the Calamari

    Carefully add the coated calamari rings in batches to the hot oil. Fry for about 2-3 minutes or until golden brown, turning occasionally. Remove with a slotted spoon and drain on paper towels.

Spicy Aioli Preparation

    In a small bowl, combine the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Mix until smooth and well combined.

    Taste the aioli and adjust the salt or sriracha according to your preference for spice.
