Method
Preparation
- 1
Prepare the Chicken
Preheat your oven to 400°F (200°C). Slice the chicken breasts in half horizontally to create thinner cutlets. Season both sides with salt and black pepper.
- 2
Breading and Cooking
- 3
Bread the Chicken
Dip each chicken cutlet first into the flour, shaking off any excess, then into the eggs, and finally coat with breadcrumbs. Ensure each piece is thoroughly covered.
- 4
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken cutlets, cooking for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside on a paper towel to drain excess oil.
Assembly and Baking
- 5
Assemble the Chicken Parmesan
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place the fried chicken cutlets on top of the sauce. Spoon more marinara sauce over each cutlet, then sprinkle with mozzarella and Parmesan cheese.
- 6
Bake the Dish
Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is bubbly and melted.
Serving
- 7
Garnish and Serve
Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
