Preparation

    Prepare the Broth

    In a large saucepan, bring the chicken or vegetable broth to a boil over medium-high heat.

    Add Aromatics

    Add the smashed lemongrass, torn kaffir lime leaves, sliced galangal, and sliced bird's eye chili to the boiling broth. Let it simmer for 10 minutes to infuse the flavors.

Cooking

    Add Mushrooms and Optional Ingredients

    After the broth has simmered, add the sliced mushrooms, and if using, add the tomato and onion. Let it cook for another 5 minutes.

    Cook the Shrimp

    Add the peeled and deveined shrimp to the pot. Cook until the shrimp turn pink and are cooked through, about 3-5 minutes.

    Season the Soup

    Stir in the fish sauce and lime juice. Taste and adjust the seasoning if needed, adding more fish sauce or lime juice to your preference.

Serving

    Garnish and Serve

    Ladle the soup into bowls and garnish with chopped cilantro. Serve hot and enjoy!
