Tom Yum Noodle Soup Recipe

In a large pot, combine the coconut milk and vegetable broth. Stir well to mix.

Add the lemongrass stalk, galangal or ginger, kaffir lime leaves, and Thai chili peppers to the pot. Bring the mixture to a gentle simmer over medium heat.

Once simmering, stir in the fish sauce and lime juice. Adjust seasoning to taste, allowing to simmer for an additional 10 minutes.
Preparing Noodles and Vegetables

Cook Rice Noodles
While the broth simmers, cook the rice noodles according to package instructions until tender. Drain and set aside.

Prepare Bean Sprouts and Garnishes
Rinse the bean sprouts under cold water. Chop the scallions into thin slices and roughly chop the cilantro.
Assembling the Soup

In serving bowls, place a portion of cooked rice noodles. Ladle the hot broth over the noodles, ensuring to include the aromatics.

Top each bowl with a handful of bean sprouts, sliced scallions, and chopped cilantro.
