    Prepare the Vegetables

    Wash and chop the bell pepper, cucumber, tomato, and red onion into bite-sized pieces. Drain the pineapple chunks if using canned.

    Prepare the Lettuce

    Wash and dry the lettuce leaves. Tear them into smaller pieces and arrange them as a bed on a serving platter.

    Chop the Cilantro

    Rinse the cilantro under cold water, pat dry, and chop coarsely.

Making the Dressing

    Combine Dressing Ingredients

    In a small bowl, whisk together the Thai sweet chili sauce, lime juice, sesame oil, and soy sauce until well combined.

Fry the Wonton Strips

    Prepare the Wonton Strips

    Cut the wonton wrappers into strips. Heat oil in a pan over medium heat.

    Fry the Wonton Strips

    Fry the wonton strips in the hot oil until golden and crispy, about 1-2 minutes. Remove and drain on paper towels.

Assembling the Salad

    Combine Ingredients

    In a large bowl, combine the chopped bell pepper, cucumber, tomato, red onion, and pineapple chunks. Pour the dressing over the salad and toss gently to coat.

    Serve the Salad

    Spoon the salad mixture onto the bed of lettuce on the platter. Top with fried wonton strips and sprinkle with chopped cilantro.
